No excuse for not enjoying fresh fish

Living far inland is no excuse for not enjoying the fresh taste of shrimp and prawns. Frozen shellfish work fine on the grill. Shrimp, tuna and scallops combined with fresh herbs and spices, sun-dried tomatoes, red chile peppers. I invited a few friends around and fried the combination of seafood on the grill and served it with lemon wedges, salad and a chile mayonnaise sauce. All my guests were absolutely thrilled! I also grilled shrimp marinated in tomato sauce, red wine vinegar, basil and cayenne pepper. The mixture of basil, lemon juice, mustard and garlic adds a wonderful texture and flavor.
