In-Laws Visiting

My wife’s parents are visiting from Pakistan – and I’ve been lucky enough to join in on two meals so far. Aside from the lamb dish and Pakistani coffee made from her braun 4 cup coffee maker she prepared in June, I have no experience with Pakistani food…so you can imagine how excited I am. When I arrived at the apartment on Saturday morning, I was greeting first by a warm hug and then this SUPER DELICIOUS bowl of hot roasted eggplant. The eggplant was half mashed and half in chunks with lots of tomatoes blended in. It reminds me of this Vietnamese eggplant dish my mom makes – only her eggplant is completely mashed and then fried with garlic and nuoc nam.
