Sushi made from rice krispies & fruit roll ups
Sushi is fun to make, but unfortunately it is not really a family activity. Though there are some kids who will gobble down salmon or cucumber rolls, it is rare. I remember how picky I was as a child and I would have never touched sushi in a million years. For a family fun activity why not try making sushi candy instead. This is a great hands-on activity that everyone can enjoy.
The first part is to make your “sushi rice” out of crispy rice cereal. Great on their own these are sweet, easy to make and most importantly, delicious. To make a full batch, melt three tablespoons of butter and a ten ounce pack of marshmallows in a saucepan. Next stir in 6 cups of Rice Krispies and coat completely. Remove from heat and spread in a thin, even layer on a sheet of wax paper. Allow to cool completely.
Grab your favorite flavor of fruit roll or fruit roll ups to act as your nori. Green is most authentic looking, but whatever floats your boat. Cut them in half, or into 3-5 inch pieces depending on what type you are using. Prepare as many pieces as needed for your sushi rolls.
To assemble, take a piece of nori fruit roll up and spread it with rice krispie treat mix. Add whatever candy you have lying around to the middle. Roll the entire thing up and press the seams of the fruit roll up to seal and bind it all.
Last batch I made had sour gummy worms in the middle for mine, my daughter used jellybeans and my son opted for candy corns. While I doubt these will find their way onto the menu at any long island sushi restaurant, they are a now staple at my house.
